though i don’t eat nearly enough of them, i love salads. and one of the coolest things, i find, is to notice and watch what others put into their salads. I mean, people who are my friends, people i care about. Not just any random person. I like seeing how they create their salad at the salad bar. In my opinion, Whole Foods has the best salad bar ever created. And here is what I put in mine pretty much all the time:
spinach
fancy lettuce sans radicchio
corn**
a few cherry tomatoes
broccoli
carrots
pulled chicken
feta cheese
dressing: some mediterrean vinagrette.
YUMMY!

All of the above plus:
peas if I'm in the mood,
cucumbers-definately,
zuccini if available,
maybe a hard boiled egg,
chick peas for sure,
I might toss in some potato salad, bean salad or some other type of salad,
And I always have to top it off with some of those sesame stick things... those add some delicious crunch.

well, at whole foods i love that tofu they have. And, a little thai noodles and yes, peas. I love beets, also.
When I make a salad it's got to have:
romaine and iceberg lettuce
cukes
tomato - very tiny bit
broccoli
carrots
red onion - tiny bit
peas - lots!
hard boiled egg
maybe a bit of ham or turkey or chicken
croutons
Favorite dressing is honey mustard followed by thousand island
I rarely do salad -bars- anymore, but generally I'll mix/match any of the following..rarely making the same salad twice--the only common thread..spinach, hardly ever use lettuce:
spinach
green(not chick)peas
eggs
olives black or green
feta, bleu or cheddar cheese
mushrooms
broccoli
cucumbers
tomatos
(real)bacon bits
bell pepper
hot pepper
sesame sticks
ranch or bleu cheese dressing
I don't really do salad bars, so the salads I make at home have:
spinach or baby greens
dried cherries
walnuts
crumbled blue cheese
vinagrette dressing
or
baby greens
tomatoes
cucumbers
red peppers
feta
or whatever is in the fridge.
broccoli
cauliflower
carrots
shredded cheddar
I also like bacon, and or eggs on my salads. I almost forgot croutons. Really it's mood dependant for me.

No corn, those midget veggies freak me out. But I love cheese, croutons, bacon, and I actually quite like nuts in there too. Pine nuts or cashews are tasty. Plus all the other stuff you mentioned...and red peppers and hot peppers. But no onions, and no eggs. *shudder*
